BAKED TORTILLAS ROLL-UPS STUFFED WITH CHOCOLATE CASHEW BUTTER AND HOMEMADE STRAWBERRY SAUCE
INGREDIENTS:
- 6 WHOLE-WHEAT TORTILLAS (TACO SIZE)
- 1 CUP CASHEW BUTTER
- ½ CUP BROWNIE BATTER PROTEIN POWDER
- 1 TBSP COCOA POWDER
- ½ CUP CASHEW MILK
- ¼ TSP SEA SALT
- ¼ CUP MINI CHOCOLATE CHIPS
STRAWBERRY SAUCE:
- 1 CUP FRESH STRAWBERRIES
- 2 TBSP HONEY
- ½ LEMON JUICE
- ¼ CUP WATER
DIRECTIONS:
- PREPARE YOUR STRAWBERRY SAUCE BY ADDING ALL THE INGREDIENTS TO A SMALL SAUCEPAN. BRING TO A SIMMER AND COOK FOR ABOUT 8-10 MINUTES UNTIL IT BEGINS TO THICKEN. SET ASIDE.
- MAKE THE CASHEW BUTTER BY MIXING TOGETHER THE CASHEW BUTTER, PROTEIN POWDER, COCOA POWDER, CASHEW MILK, SEA SALT AND CHOCOLATE CHIPS.
- FILL EACH TORTILLA WITH THE CASHEW BUTTER AND A SPOONFUL OF THE STRAWBERRY SAUCE. ROLL UP AND PLACE ON A BAKING SHEET. SPRAY WITH COOKING OIL ON BOTH SIDES AND COOK IN THE AIR FRYER AT 350 F FOR 8-10 MINUTES OR UNTIL GOLDEN BROWN.
- SERVE WITH A DUSTING OF POWDERED SUGAR.
