INGREDIENTS: 

  • 1 CUP MASHED BANANAS (1-1 1/2 BANANAS)  
  • 1/2 CUP OATS
  • 1 TABLESPOON COCONUT OIL 
  • 1 SCOOP BEAM BLUEBERRY MUFFIN VEGAN PROTEIN
  • 1/4 CUP CHOPPED PECANS
  • 1/2 CUP FRESH BLUEBERRIES
  • 1 TEASPOON BAKING SODA
  • 1 TABLESPOON CORNFLOUR
  • 1/2 TEASPOON VANILLA ESSENCE

 

DIRECTIONS: 

  1. PREHEAT THE OVEN TO 325℉
  2. MASH BANANA WITH A FORK IN A MEDIUM BOWL 
  3. MIX IN THE PROTEIN, OATS, AND COCONUT OIL 
  4. MIX IN THE VANILLA ESSENCE, BAKING SODA, AND CORNFLOUR 
  5. ADD PECANS AND BLUEBERRIES AND GENTLY FOLD INTO THE BATTER
  6. PLACE 6 MUFFIN CUPS INTO A MUFFIN/CUPCAKE TIN AND POUR BATTER EVENLY INTO THE LINERS
  7. BAKE FOR 15-20 MINUTES
  8. REMOVE AND ALLOW TO COOL DOWN
  9. ENJOY!

    Love love love this recipe! So good and easy to make. I do add a splash of macadamia nut milk unsweetened as I felt the mix was a little dry so this gave it that moisture it needed. I make this all the time and they definitely don’t last long in our house!
